Our whole operation runs on our AMS. How risky is replacing it?

It is a serious project that deserves respect, and it is very achievable with the right sequence. Data migration gets designed and validated first, the new platform runs in parallel before cutover, and rollback stays possible until the replacement has proven itself with your real workload.
